Aitor Cullinan is an organic vegetable farmer working in east Galway. He does delivery box schemes and grows the most tantalizing tasty vegetables.
As part of this project we have a greenhouse and some beds and are able to always have a few things on our menu that we have grown from seed. By doing so we have learnt a valuable lesson in the time, effort and work that goes into growing and have the upmost respect for anyone that does.
From the offset we knew that we wanted to work with small farms, build relationships and work off their land. Let their crop depict our menu. We call every week to find out what's available and the set menu is derived from their answer.
We are islanders.
